  • 8 oz pasta (e.g., penne or spaghetti)
  • 2 fillets salmon fillets
  • 1 cup fresh basil pesto Store-bought or homemade
  • 1 cup cherry tomatoes, blistered
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese (optional, for serving) Can be added on top before serving

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and set aside.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat.
  3. Season the salmon fillets with salt and pepper and cook in the skillet for about 4-5 minutes on each side, or until cooked through.
  4. Remove salmon from the skillet and flake it into large pieces.
  5. In the same skillet, add the blistered tomatoes and sauté for 2-3 minutes until they start to soften.
  6. Add the cooked pasta to the skillet along with the basil pesto, and toss to combine.
  7. Gently fold in the flaked salmon.
Serving
  1. Serve warm, optionally topped with Parmesan cheese.

Notes

For added flavor, squeeze some lemon juice over the salmon before cooking. You can add different vegetables like spinach, asparagus, or zucchini. Substitute salmon with grilled chicken or shrimp for different protein options.
