Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour This forms the base of your cookie bars.
  • 1 tbsp Baking powder For raising the cookie bars.
Wet Ingredients
  • 1 cup Sugar Use a mix of brown and white for depth.
  • 1/2 cup Butter Use unsalted butter for better control of salt levels.
  • 2 large Eggs Room temperature eggs yield a smoother batter.
  • 1 tsp Vanilla extract Use pure vanilla for the best flavor.
Color and Toppings
  • as needed Food coloring Use any gel or liquid coloring.
  • as needed Sprinkles or edible glitter Optional, for decoration.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (2-3 minutes).
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour and baking powder, then gradually stir this into the wet mixture until just combined.
  5. Divide the dough into portions and add food coloring to each, mixing until you achieve your desired shades.
  6. Drop spoonfuls of colored dough into the prepared baking dish and use a knife to swirl the colors together.
Baking
  1. Top with sprinkles or edible glitter if desired, then bake for about 20-25 minutes, or until golden.
  2. Let cool for 10 minutes in the dish before transferring to a wire rack.
  3. Once completely cooled, cut into squares and serve.

Notes

These bars can be stored in an airtight container in the fridge for up to a week. You can also freeze them for up to three months. For a warm treat, microwave for 10-15 seconds.
