Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
Mixing Ingredients
  1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  2. Beat in the eggs one at a time and then add the vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients and mix until just combined; do not overmix.
  4. Fold in any optional mix-ins.
Baking
  1. Use a cookie scoop or tablespoon to portion the dough onto prepared baking sheets, spacing them about 2 inches apart.
  2. Bake for 12-15 minutes until the edges are lightly golden.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a chewy center, do not overbake. Consider chilling the dough for an hour for better flavor. Store cookies in an airtight container at room temperature for up to one week.
