Ingredients
  

Salmon Preparation
  • 4 pieces Salmon fillets (6 oz each, skin-on)
  • 2 tbsp Olive oil
  • 1 whole Lemon (half for zest/juice, half for slices)
  • 2 tbsp Fresh dill (chopped)
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt (or to taste)
  • 0.25 tsp Black pepper (freshly ground, or to taste)
Asparagus Preparation
  • 1 lb Asparagus spears (trimmed)
  • 1 tbsp Olive oil
  • 0.25 tsp Salt (or to taste)
  • 0.125 tsp Black pepper (freshly ground, or to taste)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Cooking
  1. In a small bowl, mix 2 tablespoons of olive oil, the zest and juice of half a lemon, chopped dill, garlic powder, salt, and black pepper. Rub this mixture onto the salmon fillets.
  2. Place the salmon skin-side down on the prepared baking sheet.
  3. In another bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and black pepper. Spread the asparagus around the salmon on the baking sheet.
  4. Place lemon slices on top of the salmon and asparagus.
  5. Bake everything in the preheated oven for about 15-20 minutes, or until the salmon is flaky and the asparagus is tender.
Serving
  1. Once done, remove the baking sheet from the oven and let it cool for a few minutes.
  2. Serve the salmon fillets and roasted asparagus on a plate. Drizzle any remaining lemon juice from the baking sheet over the top for extra flavor.
  3. Garnish with additional fresh dill or lemon wedges if you like.

Notes

For extra crispiness, you can broil the salmon for a minute or two at the end of cooking. Make sure to check the salmon for doneness by using a fork to see if it flakes easily. Feel free to substitute the asparagus with other vegetables like zucchini or broccoli for a different flavor.
