Preparation
- Spiralize the zucchini into noodles or use a peeler to create ribbons. Mince the garlic and chop the parsley.
Cooking
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- In the same skillet, add a bit more olive oil if needed and toss in the minced garlic. Sauté for about 30 seconds until fragrant—be careful not to burn it!
- Toss the zucchini noodles into the skillet, and cook for about 3-4 minutes, just until they’re tender but still have a nice bite.
- Return the shrimp to the pan, squeeze the lemon juice over everything, and sprinkle with red pepper flakes, if using. Mix gently to combine, letting everything heat through for an additional 1-2 minutes.
- Remove from heat, sprinkle with fresh parsley, and enjoy!
Notes
Don't overcook the shrimp. They cook quickly. If you prefer firmer noodles, cook the zucchini for a shorter time. Customize with additional veggies like spinach or cherry tomatoes.
