For the Zesty Garlic-Herb Shrimp
  • 1 lb Large shrimp peeled, deveined, tails on or off
  • 3 cloves Garlic minced
  • 2 tbsp Fresh parsley chopped
  • 1 tsp Dried oregano
  • 1/2 tsp Red pepper flakes optional, for a kick
  • 1 tbsp Olive oil plus more for drizzling
  • 1 tbsp Lemon juice freshly squeezed
  • 1/2 tsp Lemon zest
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
For the Pizza
  • 1 lb Store-bought pizza dough room temperature
  • 2 tbsp Olive oil extra virgin
  • 2 cloves Garlic thinly sliced or minced
  • 1 tsp Dried Italian seasoning
  • 1.5 cups Low-moisture mozzarella cheese shredded
  • 1/2 cup Cherry tomatoes halved
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Fresh basil leaves for garnish
  • 2 tbsp Grated Parmesan cheese optional

Method
 

Prepare the Zesty Garlic-Herb Shrimp
  1. In a large mixing bowl, combine the shrimp, minced garlic (3 cloves), chopped parsley, dried oregano, red pepper flakes (if using), 1 tbsp olive oil, lemon juice, lemon zest, salt, and black pepper. Toss gently to ensure all shrimp are coated. Let marinate at room temperature for 15-20 minutes while you prepare other ingredients and preheat the oven.
Preheat Oven & Prepare Pizza Base
  1. Preheat your oven to 450°F (230°C). If using a pizza stone, place it in the oven during preheating. Lightly flour a baking sheet or a pizza peel if using a stone.
  2. On your floured surface, stretch or roll out the pizza dough to your desired thickness and shape (round or rectangular). Carefully transfer the dough to the prepared baking sheet or pizza peel.
Assemble the Pizza
  1. In a small bowl, whisk together the 2 tbsp olive oil, sliced/minced garlic (2 cloves), and dried Italian seasoning. Brush this mixture evenly over the pizza dough, leaving a small border for the crust.
  2. Sprinkle about half of the shredded mozzarella cheese evenly over the olive oil base.
  3. Arrange the marinated shrimp, cherry tomato halves, and thinly sliced red onion over the cheese.
  4. Sprinkle the remaining mozzarella cheese and the optional grated Parmesan cheese over the toppings.
Bake the Pizza
  1. Carefully transfer the pizza to the preheated oven (either on the baking sheet or slide onto the pizza stone).
  2. Bake for 12-15 minutes, or until the crust is golden brown, the cheese is melted and bubbly, and the shrimp are cooked through and pink. Cooking time may vary based on your oven and dough thickness.
  3. Once baked, carefully remove the pizza from the oven. Let it cool for 2-3 minutes before slicing.
  4. Garnish generously with fresh basil leaves before serving. Enjoy!

Notes

For a crispier crust, pre-bake the dough for 5-7 minutes before adding toppings. If you prefer a spicier kick, increase the red pepper flakes in the shrimp marinade. This pizza is best served immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in the oven or an air fryer.
