Ingredients
  

  • 1 cup Cottage Cheese full-fat or low-fat
  • 1/2 cup Mixed Berries fresh or thawed frozen, e.g., strawberries, blueberries, raspberries
  • 2 tbsp Sliced Almonds or chopped walnuts/pecans
  • 1 tbsp Granola your favorite kind
  • 1 tsp Honey or Maple Syrup or to taste
  • 1/4 tsp Vanilla Extract optional
  • 1/8 tsp Cinnamon optional

Method
 

  1. In a small bowl, add the cottage cheese. If desired, stir in the vanilla extract and cinnamon until well combined.
  2. Gently arrange the mixed berries and sliced almonds over the cottage cheese.
  3. Sprinkle the granola over the toppings. Drizzle with honey or maple syrup just before serving. Enjoy immediately.

Notes

For an extra protein boost, add a scoop of your favorite protein powder (e.g., vanilla or berry flavored) to the cottage cheese and mix well before adding toppings. Feel free to customize with other fruits like banana slices, peaches, or kiwi. Other great toppings include chia seeds, flax seeds, a dollop of nut butter, or chocolate chips.
