Prepare Ingredients
- Ensure all ingredients are ready and measured. If your pineapple isn't frozen, you may want to add more ice cubes to achieve the desired coldness and texture for the smoothie.
Blend the Smoothie
- Add the frozen pineapple chunks, fresh mint leaves, fresh lime juice, coconut water, and optional honey or maple syrup to a high-speed blender.
- Blend on high until the mixture is completely smooth and creamy. If the smoothie is too thick, add a splash more coconut water (1-2 tablespoons at a time) until you reach your desired consistency. If you prefer it colder or thicker, add the optional ice cubes and blend again until smooth.
Taste and Serve
- Taste the smoothie and adjust sweetness or tartness if necessary. Add more sweetener for a sweeter taste or a tiny squeeze more lime juice for extra tang.
- Pour immediately into two glasses. Garnish with a fresh mint sprig or a lime wedge if desired, and serve chilled for the best experience.
Notes
For an extra boost, consider adding a tablespoon of chia seeds or flax seeds before blending. You can also substitute coconut water with almond milk or plain water for a different flavor profile. Best enjoyed fresh!
