  • 1.5 cups frozen mango chunks make sure they are very cold
  • 1 cup full-fat coconut milk canned, unsweetened for best creaminess
  • 1 tbsp fresh lime juice adds brightness
  • 1-2 tsp maple syrup or agave, honey; adjust to taste
  • 1/4 cup cold water or more coconut milk for a richer, thinner smoothie
Optional Garnish
  • 2 leaves fresh mint for serving
  • 1 tsp shredded coconut toasted or untoasted

Method
 

Prepare the Smoothie Base
  1. Combine all smoothie ingredients (frozen mango chunks, full-fat coconut milk, fresh lime juice, maple syrup, and cold water) into a high-speed blender.
  2. Secure the lid and blend on high until the mixture is completely smooth and creamy. If the smoothie is too thick, add an extra tablespoon or two of water or coconut milk and blend again until desired consistency is reached.
  3. Taste the smoothie and adjust sweetness or tartness by adding more maple syrup or lime juice, if desired.
Serving Instructions
  1. Pour the Mango Coconut Milk Smoothie into two glasses. Garnish with fresh mint leaves and a sprinkle of shredded coconut, if using.
  2. Serve immediately and enjoy!

Notes

For an extra protein boost, add 1 scoop of your favorite vanilla or unflavored protein powder. If you prefer a colder, thicker smoothie, you can add 1/2 cup of ice cubes along with the other ingredients, adjusting the liquid as needed. Store any leftover smoothie in an airtight container in the refrigerator for up to 24 hours, though it's best enjoyed fresh.
