Ingredients

For the Sugar Cookie Crust
  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter softened
  • 3/4 cup Granulated sugar
  • 1 Large egg
  • 1 tsp Vanilla extract
For the Cream Cheese Frosting
  • 8 oz Cream cheese softened
  • 1/4 cup Unsalted butter softened
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1-2 tbsp Milk or heavy cream as needed for consistency
For the Topping
  • 2 lbs Fresh strawberries washed, hulled, and sliced
  • 1/4 cup Strawberry jam or preserves optional, for glaze
  • 1 tbsp Water or lemon juice optional, for glaze

Equipment

  • 9-12 inch round pizza pan or baking sheet
  • Large mixing bowls
  • Electric Mixer (stand or hand)
  • Rubber Spatula
  • Measuring cups and spoons
  • Sharp Knife
  • Cutting Board

Method

Prepare the Cookie Crust
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-12 inch round pizza pan or line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not overmix.
  6. Press the dough evenly onto the prepared pizza pan or baking sheet, forming a round crust about 1/4 to 1/2 inch thick.
  7. Bake for 12-15 minutes, or until the edges are lightly golden brown and the center is set. The cookie should be soft. Remove from oven and let cool completely on a wire rack before frosting (this is crucial!).
Prepare the Cream Cheese Frosting
  1. While the crust cools, in a large bowl, beat together the softened cream cheese and softened butter with an electric mixer until smooth and creamy.
  2. Gradually add the powdered sugar, mixing on low speed until incorporated, then increase speed to medium and beat until fluffy. Beat in the vanilla extract.
  3. If the frosting is too thick, add milk or heavy cream one tablespoon at a time until it reaches a smooth, spreadable consistency.
Assemble the Strawberry Pizza
  1. Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small border around the edge.
  2. Arrange the sliced strawberries decoratively over the cream cheese frosting. You can start from the outer edge and work your way to the center, slightly overlapping them.
  3. If using, prepare the optional glaze: In a small microwave-safe bowl, microwave the strawberry jam/preserves with water or lemon juice for 15-30 seconds, or until melted and smooth. Stir well. Lightly brush or drizzle the glaze over the strawberries for extra shine and flavor.
  4. Chill the Strawberry Dessert Pizza in the refrigerator for at least 30 minutes before serving. This helps the frosting set and flavors meld.
  5. Slice with a sharp knife and serve chilled.

Notes

For best results, ensure the cookie crust is completely cool before adding the frosting; otherwise, the frosting will melt. This dessert pizza is best served the day it's made but can be stored covered in the refrigerator for up to 2-3 days. If you prefer a thicker crust, use a 9-inch pizza pan; for a thinner, crispier crust, use a 12-inch pan or baking sheet.
