Ingredients
  

Donut Batter
  • 1 box strawberry cake mix Provides flavor and sweetness.
  • 2 eggs Can be substituted with applesauce for a no-egg version.
  • 1/4 cup vegetable oil Keeps the donuts moist; melted coconut oil can be used.
  • 1/2 cup buttermilk Can substitute with milk or non-dairy alternative.
  • 1 cup fresh strawberries (diced) Try to use fresh for best flavor; frozen strawberries can be used if thawed and drained.
Topping
  • 1 cup powdered sugar For dusting or making a glaze.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, vegetable oil, and buttermilk. Stir until just combined.
  3. Gently fold in the diced fresh strawberries.
  4. Transfer the batter into a piping bag or a zip-lock bag and pipe it into a greased donut pan, filling each cavity about 2/3 full.
Baking
  1. Bake for about 10-12 minutes, or until a toothpick inserted comes out clean.
  2. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  3. Dust with powdered sugar or make a simple glaze by mixing powdered sugar with a little milk until smooth.

Notes

Store leftover donuts in an airtight container in the fridge for up to 3 days. To freeze, place in a single layer on a baking sheet then transfer to a freezer bag for up to 3 months. Reheat in the microwave for 10-15 seconds before serving.
