Ingredients
  

For the Fritters
  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 1 Large egg lightly beaten
  • 1/2 cup Milk whole or 2%
  • 4 tbsp Unsalted butter melted
  • 1 tsp Vanilla extract
  • 2 medium Granny Smith apples peeled, cored, and finely diced
For the Vanilla Glaze
  • 1 cup Powdered sugar
  • 2-3 tbsp Milk
  • 1/2 tsp Vanilla extract
For the Cinnamon Glaze
  • 1/2 cup Powdered sugar
  • 1-2 tbsp Milk
  • 1/4 tsp Ground cinnamon

Method
 

Prepare the Fritter Dough
  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  2. In a separate medium bowl, whisk together the lightly beaten egg, milk, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.
  4. Gently fold in the finely diced apples until evenly distributed.
Bake the Fritters
  1. Preheat your oven to 375°F (190°C) or your air fryer to 350°F (175°C). Line a baking sheet with parchment paper. If using an air fryer, you may need to work in batches and lightly grease the basket.
  2. Using two spoons or a small ice cream scoop, drop spoonfuls of the fritter dough onto the prepared baking sheet or into the air fryer basket, leaving about 2 inches between each fritter. Aim for about 12 fritters.
  3. If baking in the oven, bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  4. If air frying, air fry for 10-14 minutes, flipping halfway through, until golden brown and cooked through. Cooking time may vary depending on your air fryer model.
  5. Transfer the baked fritters to a wire rack to cool slightly while you prepare the glazes.
Glaze the Fritters
  1. In a shallow bowl, whisk together 1 cup powdered sugar, 2-3 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Adjust milk as needed to achieve a pourable but not too thin consistency.
  2. While the fritters are still warm (but not hot), dip the top of each fritter into the vanilla glaze, allowing excess to drip off. Place them back on the wire rack over parchment paper to catch drips. Let the glaze set for 5-10 minutes.
  3. In another shallow bowl, whisk together 1/2 cup powdered sugar, 1-2 tablespoons milk, and 1/4 teaspoon ground cinnamon until smooth.
  4. Dip the top of each vanilla-glazed fritter into the cinnamon glaze, or drizzle the cinnamon glaze over the vanilla glaze, creating a double-glazed effect.
  5. Allow the second glaze to set for another 10-15 minutes before serving.

Notes

Store leftover fritters in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 3 days. Reheat briefly in a microwave or toaster oven for a fresh-baked feel.
