Ingredients
  

Cookie Dough

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually mix the dry ingredients into the wet ingredients.
  • Fold in oats and raisins until evenly combined.
  • Drop spoonfuls of dough onto the baking sheet and bake for 10–12 minutes until golden brown.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra plump raisins, soak them in warm water for 10 minutes and drain before adding to the dough.
