  • 2 fillets Salmon fillets Look for skin-on fillets for extra crispiness.
  • 2 tablespoons Cajun seasoning Use store-bought or homemade.
  • 1 tablespoon Olive oil Can substitute with canola or avocado oil.
  • 1 tablespoon Lemon juice Fresh is best, but bottled juice works in a pinch.
  • 1 tablespoon Fresh parsley Add as a garnish. Can swap for cilantro or green onions.

Preparation
  1. Start with clean, dry salmon fillets. Pat them dry with a paper towel to remove excess moisture.
  2. In a small bowl, mix Cajun seasoning with olive oil to create a flavorful paste.
  3. Rub the Cajun oil mixture evenly over the salmon fillets.
  4. Preheat your grill to medium-high heat.
Cooking
  1. Place the salmon skin-side down on the grill. Cook for about 5-6 minutes.
  2. Carefully flip and grill for another 3-4 minutes or until the salmon is cooked through.
  3. In the last minute of cooking, squeeze fresh lemon juice over the salmon.
  4. Remove from the grill and let it rest for a couple of minutes. Garnish with chopped parsley.

Notes

Don’t overcook the salmon; aim for slightly pink in the center. Consider using a fish spatula to maintain the structure of the salmon while cooking. This dish pairs well with rice, potatoes, or salad.
