Ingredients
  

Main Ingredients
  • 8 oz Italian Sausage Use sweet or spicy depending on preference.
  • 3 cups Bell Peppers (mixed red, yellow, green) Adds sweetness and color.
  • 1 medium Onion Sweet onions are best.
  • 3 cloves Garlic Fresh garlic enhances flavor.
  • 2 tbsp Olive Oil For sautéing.
  • 12 oz Pasta Penne or fusilli recommended.
  • 14.5 oz Crushed Tomatoes Canned or homemade works.
  • 1/2 cup Parmesan Cheese Grated fresh over the top.
  • 1/4 cup Fresh Basil For garnish.
  • 1/4 tsp Red Pepper Flakes Optional for added spice.

Method
 

Cooking the Pasta
  1. In a large pot of salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
Sautéing the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the sausages and cook until browned and cooked through, about 5–7 minutes. Remove and slice into bite-sized pieces.
Cooking the Vegetables
  1. In the same skillet, add sliced onions and bell peppers. Sauté for about 5 minutes until they start to soften. Add garlic and cook for an additional minute until fragrant.
Combining Ingredients
  1. Return the sausage to the skillet and add the crushed tomatoes. Stir well and let simmer for about 5 minutes.
Mixing with Pasta
  1. Add the drained pasta to the skillet, tossing everything together until well coated. If it looks a bit dry, add a splash of pasta water.
Seasoning and Serving
  1. Season with salt, pepper, and red pepper flakes to taste. Top with fresh basil and Parmesan cheese before serving.

Notes

Sauté at the right temperature for the best browning. Store in an airtight container in the fridge for up to 3 days. Freezes well for up to 3 months. Can be reheated with a splash of water or olive oil.
