Ingredients
  

For the Roasted Garlic
  • 2 whole heads Garlic halved horizontally
  • 2 tbsp Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper freshly ground
For the Cooked Chicken
  • 1 lb Boneless, skinless chicken breast cut into 1/2-inch pieces
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper freshly ground
  • 1/2 tsp Dried oregano
  • 1/4 tsp Garlic powder
For the White Sauce
  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 1 1/2 cups Milk whole or 2%
  • 1/2 cup Parmesan cheese grated
  • 1/4 tsp Salt
  • 1 pinch Black pepper freshly ground
  • 1 pinch Ground nutmeg
For the Pizza Assembly
  • 1 lb Pizza dough pre-made, at room temperature
  • 1 tbsp Cornmeal for dusting
  • 1 1/2 cups Mozzarella cheese shredded, part-skim
  • 1/2 cup Provolone cheese shredded
  • 1/4 cup Red onion finely chopped
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Roast Garlic Group Header
  1. Preheat your oven to 400°F (200°C). Slice the top 1/4 inch off each head of garlic to expose the cloves. Place each head cut-side up in a small baking dish or on a piece of aluminum foil.
  2. Drizzle each garlic head with 1 tbsp olive oil, and sprinkle with a pinch of salt and pepper. Wrap tightly in foil if using, or cover the baking dish. Roast for 40-45 minutes, or until the cloves are very soft and golden brown. Let cool slightly, then squeeze the softened garlic from their skins into a small bowl. Mash with a fork to create a paste.
Prepare Chicken Group Header
  1. While the garlic roasts, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the diced chicken, salt, pepper, dried oregano, and garlic powder. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove from heat and set aside.
Make White Sauce Group Header
  1. In a medium saucepan, melt 2 tbsp unsalted butter over medium heat. Add the all-purpose flour and whisk constantly for 1 minute to create a roux.
  2. Gradually whisk in the milk until no lumps remain. Bring the sauce to a gentle simmer, whisking occasionally, and cook for 3-5 minutes until it thickens. Stir in the grated Parmesan cheese until melted and smooth. Season with 1/4 tsp salt, a pinch of black pepper, and a pinch of ground nutmeg. Remove from heat.
Assemble and Bake Pizza Group Header
  1. Increase oven temperature to 450°F (230°C). Lightly grease a baking sheet and sprinkle with cornmeal to prevent sticking. Carefully stretch or roll out the pizza dough into a 12-14 inch circle on the prepared baking sheet.
  2. Evenly spread the roasted garlic paste over the pizza dough, leaving about a 1-inch border. Follow with an even layer of the white sauce.
  3. Sprinkle the shredded mozzarella and provolone cheeses over the sauce. Distribute the cooked chicken pieces and chopped red onion evenly over the cheese.
  4. Bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned. For a crispier crust, you can carefully slide the pizza directly onto a preheated pizza stone or oven rack for the last 5 minutes of baking.
  5. Remove the pizza from the oven, let it cool for 2-3 minutes, then garnish with fresh chopped parsley. Slice and serve hot.

Notes

For best results, ensure your pizza dough is at room temperature before stretching. This makes it much easier to work with. If you don't have time to roast fresh garlic, you can substitute with 1-2 tablespoons of pre-minced roasted garlic from a jar, or even garlic powder, but the flavor won't be as rich.
