Refreshing Watermelon & Mint Smoothie

Ingredients
  

  • 4 cups watermelon cubed, frozen
  • 1/4 cup fresh mint leaves packed
  • 1 tbsp lime juice freshly squeezed
  • 1-2 tbsp honey or maple syrup optional, to taste
  • 1/2 cup cold water or coconut water
  • 1/2 cup ice cubes optional, for extra thickness

Method
 

  1. Ensure your watermelon is cubed and frozen for at least 4 hours, or overnight. This is crucial for a thick, cold smoothie without excessive ice. If not pre-frozen, you may need more ice.
  2. Add the frozen watermelon chunks, fresh mint leaves, fresh lime juice, and cold water (or coconut water) to your blender. If using, add honey or maple syrup now.
  3. Start blending on a low setting, gradually increasing to high. Use the tamper if your blender has one to push ingredients towards the blades. If the smoothie is too thick to blend, add water or coconut water one tablespoon at a time until it reaches your desired consistency.
  4. Taste the smoothie and adjust sweetness (add more honey/maple syrup) or tartness (add more lime juice) as needed.
  5. Pour into glasses and serve immediately. Garnish with a fresh mint sprig or a small watermelon wedge if desired.

Notes

For an extra boost, add a scoop of collagen powder or a handful of spinach (you won't taste it!). You can also add a slice of fresh ginger for a zesty kick. Store any leftovers in an airtight container in the refrigerator for up to 24 hours, though it's best enjoyed fresh.
