Ingredients
  

For the cheesecake mixture
  • 8 oz cream cheese, softened Make sure cream cheese is well-softened to avoid lumps.
  • 1 cup powdered sugar Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 1 cup whipped topping Can use non-dairy whipped topping for a vegan version.
For the fruit layers
  • 2 cups strawberries, sliced
  • 2 cups blueberries
Optional toppings
  • graham cracker crumbs Sprinkle on top if desired.

Method
 

Preparation
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until well combined.
  3. Gently fold in the whipped topping until the mixture is light and fluffy.
Assembly
  1. In a large serving bowl, layer the sliced strawberries and blueberries.
  2. Pour the cheesecake mixture over the fruit and gently mix to combine.
  3. If desired, sprinkle graham cracker crumbs on top.
Chill
  1. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Serve
  1. Serve chilled in clear bowls to show off the layers of fruit and cheesecake.
  2. Add a sprig of mint on top for a nice touch.

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days. Adjust sweetness and customize with other berries or fruits like peaches or kiwis.
