Quick Weeknight Pizza with Frozen Bread Dough

Ingredients
  

For the Pizza
  • 1 loaf frozen bread dough 16 oz / 450g, thawed overnight in the refrigerator or 2-3 hours at room temperature
  • 1 tbsp olive oil plus extra for greasing
  • 1/2 cup pizza sauce your favorite brand
  • 1.5 cups mozzarella cheese shredded
  • 1/2 cup pepperoni slices or other desired protein topping
  • 1/4 cup bell pepper thinly sliced, any color
  • 1/4 cup red onion thinly sliced
  • 1/2 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • pinch red pepper flakes optional
  • Salt and black pepper to taste

Method
 

Prepare the Dough & Oven
  1. Ensure your frozen bread dough is completely thawed. If you thawed it in the refrigerator, let it sit at room temperature for about 30 minutes before use to make it easier to work with.
  2. Preheat your oven to 425°F (220°C). Lightly grease a large baking sheet with olive oil or line it with parchment paper for easier cleanup.
Form the Pizza Base
  1. Place the thawed bread dough onto the prepared baking sheet. Using your hands, gently stretch and press the dough into a rectangular or oval shape, approximately 10x14 inches, forming a slightly raised edge for the crust.
  2. Brush the entire surface of the dough, including the edges, with 1 tablespoon of olive oil. This helps create a golden, crispy crust.
Add Toppings & Bake
  1. Spread the pizza sauce evenly over the dough, leaving about a 1/2-inch border for the crust. Sprinkle the shredded mozzarella cheese generously over the sauce.
  2. Arrange your chosen toppings (pepperoni, bell pepper, red onion, etc.) over the cheese. Sprinkle with Italian seasoning, garlic powder, and red pepper flakes (if using). Season lightly with salt and black pepper.
  3. Bake for 15-18 minutes, or until the crust is golden brown and the cheese is melted, bubbly, and slightly browned. Keep an eye on it to prevent burning.
  4. Once baked, carefully remove the pizza from the oven. Let it cool on the baking sheet for 2-3 minutes before transferring to a cutting board. Slice and serve hot.

Notes

For quicker thawing, you can place the wrapped frozen dough in a bowl of warm water for 1-2 hours. Customize your pizza with any toppings you love – mushrooms, olives, sausage, or even a drizzle of pesto! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer for best results.
