Ingredients
  

For the Pizza Base & Toppings
  • 1 pre-made pizza crust 10-12 inch, thin crust or flatbread
  • 1 tbsp olive oil
  • 1.5 cups cooked chicken shredded or diced (e.g., rotisserie chicken)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 cup Caesar dressing divided, plus more for serving
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese for baking
For the Caesar Salad Topping
  • 4 cups romaine lettuce chopped
  • 1/4 cup Caesar dressing for the salad topping
  • 1/2 cup croutons
  • 2 tbsp grated Parmesan cheese for garnish

Method
 

Prepare the Pizza
  1. Preheat your oven to 400°F (200°C). Place the pizza crust on a baking sheet.
  2. Brush the edges of the pizza crust with olive oil. In a medium bowl, toss the cooked chicken with garlic powder and black pepper to season.
  3. Spread about 1/4 cup of Caesar dressing evenly over the pizza crust, leaving a small border for the crust. Top with shredded mozzarella cheese, then evenly distribute the seasoned chicken over the cheese. Sprinkle with 1/4 cup grated Parmesan cheese.
  4. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Prepare the Salad Topping
  1. While the pizza bakes, in a large mixing bowl, combine the chopped romaine lettuce with the remaining 1/4 cup Caesar dressing. Toss gently to coat the lettuce.
Assemble and Serve
  1. Once the pizza is out of the oven, immediately top it with the dressed romaine lettuce. Sprinkle with croutons and 2 tbsp grated Parmesan cheese for garnish.
  2. Slice the pizza and serve warm. Offer extra Caesar dressing on the side if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the chicken seasoning. You can also customize by adding thinly sliced red onion or cherry tomatoes to the salad topping. This pizza is best enjoyed fresh!
