Ingredients
  

For the Waffles
  • 1 scoop vanilla or unflavored protein powder approx. 30g
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup milk dairy or non-dairy
  • 1 tbsp maple syrup or other liquid sweetener, optional
  • 1 tbsp melted coconut oil or unsalted butter
  • Cooking spray or butter for waffle iron

Method
 

Prepare the Batter
  1. Preheat your waffle maker according to the manufacturer's instructions. Lightly grease with cooking spray or butter if not non-stick.
  2. In a large mixing bowl, whisk together the protein powder, all-purpose flour, baking powder, and salt until well combined and no lumps remain.
  3. In a separate small mixing bowl, whisk the egg, milk, maple syrup (if using), and melted coconut oil or butter until thoroughly combined.
  4. Pour the wet ingredients into the dry ingredients. Whisk gently until just combined. Be careful not to overmix; a few small lumps are fine.
Cook the Waffles
  1. Once the waffle maker is hot, pour about 1/2 cup (or appropriate amount for your waffle maker) of batter onto the center of the iron. Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp.
  2. Carefully remove the cooked waffle from the iron using a fork or non-stick spatula.
  3. Repeat with the remaining batter. Serve immediately with your favorite toppings such as fresh fruit, additional maple syrup, nuts, or yogurt.

Notes

For extra flavor, consider adding a pinch of cinnamon or a 1/2 teaspoon of vanilla extract to the wet ingredients. Waffles can be made ahead and reheated in a toaster for a quick meal.
