Prepare the Batter
- Preheat your waffle maker according to the manufacturer's instructions. Lightly grease with cooking spray or butter if not non-stick.
- In a large mixing bowl, whisk together the protein powder, all-purpose flour, baking powder, and salt until well combined and no lumps remain.
- In a separate small mixing bowl, whisk the egg, milk, maple syrup (if using), and melted coconut oil or butter until thoroughly combined.
- Pour the wet ingredients into the dry ingredients. Whisk gently until just combined. Be careful not to overmix; a few small lumps are fine.
Cook the Waffles
- Once the waffle maker is hot, pour about 1/2 cup (or appropriate amount for your waffle maker) of batter onto the center of the iron. Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp.
- Carefully remove the cooked waffle from the iron using a fork or non-stick spatula.
- Repeat with the remaining batter. Serve immediately with your favorite toppings such as fresh fruit, additional maple syrup, nuts, or yogurt.
Notes
For extra flavor, consider adding a pinch of cinnamon or a 1/2 teaspoon of vanilla extract to the wet ingredients. Waffles can be made ahead and reheated in a toaster for a quick meal.
