Assemble the Sandwiches
- Lay out the 4 slices of bread on a clean surface. Butter one side of each slice generously. This will be the outside of your grilled cheese.
- Flip two of the bread slices so the unbuttered side is facing up. Place 2 slices of provolone cheese on each of these two slices.
- On top of the provolone, spread about 2 tablespoons of pizza sauce evenly on each sandwich base. Sprinkle half of the shredded mozzarella and half of the Italian seasoning over the sauce. Arrange 12 mini pepperoni slices on each, ensuring even distribution.
- Place the remaining 2 slices of provolone on top of the pepperoni layer for each sandwich. Then, top with the other two slices of bread, buttered side up, to complete the two sandwiches.
Cook the Grilled Cheese
- Heat a large non-stick skillet over medium-low heat. Once warm, carefully place the two assembled sandwiches into the skillet.
- Cook for 5-7 minutes per side, or until the bread is golden brown and crispy, and the cheese is fully melted and gooey. You may need to press down gently with your spatula to ensure even browning and proper melting.
Serve
- Remove the Pizza Grilled Cheese from the skillet, let rest for 1 minute to allow the cheese to set slightly, then slice in half diagonally and serve immediately. Optionally, serve with extra warm pizza sauce for dipping.
Notes
For an extra cheesy crust, sprinkle a tablespoon of shredded Parmesan cheese on the buttered side of the bread before placing it in the skillet. Using mayonnaise instead of butter on the outside of the bread can yield an even crispier, golden crust.
