Ingredients
  

Cake Batter
  • 1 box white cake mix
  • 1 package instant pistachio pudding mix (3.4 oz)
  • 4 eggs
  • 1 cup vegetable oil
  • 1 cup club soda or lemon-lime soda
Topping
  • 1/2 cup sliced almonds toasted optional
  • powdered sugar for dusting (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a large bowl, combine white cake mix and pistachio pudding mix.
  3. Add eggs, vegetable oil, and soda. Beat with electric mixer until smooth.
  4. Pour the batter into prepared pan and smooth the top.
  5. Sprinkle sliced almonds evenly over the top of the batter.
  6. Bake for 40–45 minutes, or until a toothpick inserted comes out clean.
  7. Let cool completely. Dust with powdered sugar before serving, if desired.

Notes

You can substitute club soda with lemon-lime soda for added flavor. Toast the almonds beforehand for a crunchier texture.
