Ingredients
  

Cake Batter

  • 1 box white cake mix
  • 1 package instant pistachio pudding mix (3.4 oz)
  • 4 eggs
  • 1 cup vegetable oil
  • 1 cup club soda or lemon-lime soda

Topping

  • 1/2 cup sliced almonds toasted optional
  • powdered sugar for dusting (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a large bowl, combine white cake mix and pistachio pudding mix.
  • Add eggs, vegetable oil, and soda. Beat with electric mixer until smooth.
  • Pour the batter into prepared pan and smooth the top.
  • Sprinkle sliced almonds evenly over the top of the batter.
  • Bake for 40–45 minutes, or until a toothpick inserted comes out clean.
  • Let cool completely. Dust with powdered sugar before serving, if desired.

Notes

You can substitute club soda with lemon-lime soda for added flavor. Toast the almonds beforehand for a crunchier texture.
