Prepare the Oats
- In a medium mixing bowl or directly into two separate 16oz (450ml) jars, combine the rolled oats, chia seeds, pistachio butter, maple syrup, vanilla extract, and a pinch of salt. Ensure the pistachio butter is not clumping at the bottom.
- Pour in the milk and stir everything together thoroughly. Mix until all ingredients are well combined and there are no dry spots of oats or chia seeds remaining. Scrape down the sides of the bowl or jar if needed.
Chill Overnight
- Cover the bowl or jars tightly with lids or plastic wrap. Place them in the refrigerator for at least 4 hours, but preferably overnight (8 hours or more), to allow the oats to soften and the mixture to thicken to a creamy consistency.
Serve and Enjoy
- In the morning, give the pistachio overnight oats a good stir. If the mixture is too thick for your liking, add a splash more milk (1-2 tablespoons at a time) and stir until you reach your desired creamy consistency.
- Divide the oats into serving bowls if prepared in one bowl, or enjoy straight from the individual jars. Top with chopped pistachios, fresh berries, and an optional dollop of Greek yogurt for extra creaminess and protein. Serve chilled.
Notes
These Pistachio Overnight Oats can be stored in airtight containers in the refrigerator for up to 3-4 days. They tend to thicken over time, so you might need to add a splash of milk before serving on subsequent days. For a different texture, you can lightly toast the chopped pistachios before adding them as a topping to enhance their nutty flavor and add a slight crunch.
