  • 4 fillets Salmon fillets Rich in omega-3 fatty acids, can use fresh or frozen.
  • 3 tablespoons Olive oil Use good quality for the best flavor.
  • 1 whole Fresh lemon Juice of half used for seasoning.
  • 3 cloves Garlic Fresh minced garlic is best.
  • 1 bunch Fresh herbs (like parsley and dill) Mix and match with what you have on hand.
  • 2 cups Vegetables (like asparagus or cherry tomatoes) Choose seasonal veggies for the freshest taste.
  • 1 teaspoon Salt Essential for seasoning.
  • 1/2 teaspoon Black pepper Essential for seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  3. In a small bowl, mix olive oil, minced garlic, salt, pepper, and the juice of half a lemon. Brush this mixture over the salmon fillets generously.
  4. Place your chosen vegetables around the salmon on the baking sheet. Drizzle more olive oil, sea salt, and lemon juice over them, tossing to coat.
Cooking
  1. Place the pan in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked to your liking and the veggies are tender but still crisp.
  2. Once done, sprinkle fresh herbs over everything and squeeze a little more lemon juice just before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. If you have extra salmon, it can be frozen for up to 3 months.
