Preparation
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper or lightly grease it with olive oil.
- In a small bowl, mix olive oil, minced garlic, salt, pepper, and the juice of half a lemon. Brush this mixture over the salmon fillets generously.
- Place your chosen vegetables around the salmon on the baking sheet. Drizzle more olive oil, sea salt, and lemon juice over them, tossing to coat.
Cooking
- Place the pan in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked to your liking and the veggies are tender but still crisp.
- Once done, sprinkle fresh herbs over everything and squeeze a little more lemon juice just before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. If you have extra salmon, it can be frozen for up to 3 months.
