Ingredients
  

For the Muffins
  • 2 cups All-purpose flour Whole wheat flour works well too for a healthier spin.
  • 1 cup Sugar Brown sugar or coconut sugar can be used for different flavors.
  • 1 tbsp Baking powder Ensure it’s fresh for the best rise.
  • 1/2 tsp Salt Just a pinch to enhance all the flavors.
  • 2 large Eggs For vegan option, use applesauce or a flax egg.
  • 1 cup Milk Any kind works (dairy or non-dairy). Yogurt can also be used.
  • 1/2 cup Vegetable oil Melted butter can be used for a richer taste.
  • 1 tsp Vanilla extract A must for that warm flavor.
  • 2 cups Nectarines Diced, fresh and sweet. Substitute with peaches if preferred.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or coat with cooking spray.
  2. Wash and dice the nectarines, removing the pits. Set aside.
Mix Dry Ingredients
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Mix Wet Ingredients
  1. In another bowl, beat the eggs, then stir in the milk, oil, and vanilla until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and gently fold them together. Be careful not to overmix.
  2. Gently fold in the diced nectarines, ensuring they are evenly distributed.
Bake Muffins
  1. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  2. Place the muffins in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

To make the muffins even more delightful, serve warm with butter or honey. These muffins freeze beautifully; just seal in a freezer-safe bag and they'll stay fresh for about 3 months.
