Mediterranean Herb-Crusted Chicken

Ingredients
  

For the Marinade
  • 4 pieces boneless skinless chicken breasts 6-8 oz each, pounded to even thickness
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary crushed
For the Topping
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Marinade
  1. In a large mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, rosemary, salt, and black pepper to create the marinade.
  2. Add chicken breasts to the marinade, ensuring they are completely coated. Cover and refrigerate for at least 15 minutes or up to 2 hours for best flavor.
Cook the Chicken
  1. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  2. Remove chicken from marinade and place in the air fryer basket, ensuring pieces don't overlap. Reserve any leftover marinade.
  3. Air fry for 12 minutes, then flip the chicken breasts and cook for an additional 8-10 minutes until internal temperature reaches 165°F (74°C).
Add Mediterranean Toppings
  1. In the last 5 minutes of cooking, top each chicken breast with cherry tomatoes, sliced olives, and red onion. Continue cooking until chicken is done.
  2. Remove chicken from air fryer and immediately sprinkle with crumbled feta cheese while hot so it slightly melts.
  3. Let rest for 5 minutes, then garnish with fresh chopped parsley and serve immediately.

Notes

For best results, pound chicken breasts to an even 3/4-inch thickness for uniform cooking. This recipe pairs beautifully with Greek rice, roasted vegetables, or a simple Mediterranean salad. Leftover chicken can be stored in the refrigerator for up to 3 days and makes excellent additions to salads or grain bowls.
