Prepare the Marinade
- In a large mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, rosemary, salt, and black pepper to create the marinade.
- Add chicken breasts to the marinade, ensuring they are completely coated. Cover and refrigerate for at least 15 minutes or up to 2 hours for best flavor.
Cook the Chicken
- Preheat your air fryer to 375°F (190°C) for 3 minutes.
- Remove chicken from marinade and place in the air fryer basket, ensuring pieces don't overlap. Reserve any leftover marinade.
- Air fry for 12 minutes, then flip the chicken breasts and cook for an additional 8-10 minutes until internal temperature reaches 165°F (74°C).
Add Mediterranean Toppings
- In the last 5 minutes of cooking, top each chicken breast with cherry tomatoes, sliced olives, and red onion. Continue cooking until chicken is done.
- Remove chicken from air fryer and immediately sprinkle with crumbled feta cheese while hot so it slightly melts.
- Let rest for 5 minutes, then garnish with fresh chopped parsley and serve immediately.
Notes
For best results, pound chicken breasts to an even 3/4-inch thickness for uniform cooking. This recipe pairs beautifully with Greek rice, roasted vegetables, or a simple Mediterranean salad.
