Ingredients
  

For the Chicken
  • 1 pound Chicken breast or thighs Tender and juicy; turkey can be used for a leaner option.
  • 1/4 cup Olive oil Extra virgin is best.
  • 2 tablespoons Lemon juice Adds freshness to the marinade.
  • 2 cloves Garlic Minced; fresh preferred.
  • 2 teaspoons Dried oregano Essential for Mediterranean flavor.
  • 1 teaspoon Paprika Smoked paprika recommended.
  • to taste Salt and pepper Essential for seasoning.
For the Vegetables
  • 1 cup Bell peppers Use colorful varieties for best flavor.
  • 1/2 cup Red onion Can swap with yellow onion.
  • 4-6 Wooden or metal skewers Soak wooden skewers to prevent burning.

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper to make the marinade.
  3. Pour the marinade over the chicken and toss until well coated. Let it marinate for at least 30 minutes (or up to 2 hours for maximum flavor).
  4. While the chicken marinates, cut the bell peppers and red onion into chunks.
Cooking
  1. Thread the marinated chicken and vegetables alternately onto skewers, leaving some space for even cooking.
  2. Preheat the grill to medium-high heat. If using an oven, preheat to 400°F (200°C).
  3. Grill skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred. If baking, roast for 20-25 minutes.
  4. Once cooked, let them rest for a few minutes before serving.

Notes

For deeper flavor, marinate chicken for longer (up to overnight). Soak wooden skewers for 30 minutes to prevent burning. Avoid overcrowding on skewers for proper cooking and browning.
