Ingredients
  

Chicken & Pasta
  • 2 large chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 8 oz pasta penne or fettuccine
Sauce
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes chopped
  • 1 tsp red pepper flakes optional, for spice
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1/4 cup fresh basil chopped

Method
 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken breasts with salt, pepper, and garlic powder.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, sauté garlic until fragrant.
  5. Add chicken broth, heavy cream, sun-dried tomatoes, red pepper flakes, and Italian seasoning. Simmer for 5 minutes.
  6. Stir in Parmesan cheese and cooked pasta. Toss to combine.
  7. Slice chicken and place on top. Garnish with fresh basil and more Parmesan if desired.

Notes

For a lighter version, use half-and-half instead of heavy cream and reduce the cheese.
