Mango Sago Delight

Ingredients
  

Main Ingredients

  • 1/2 cup small tapioca pearls (sago)
  • 2 ripe mangoes peeled and diced
  • 1 cup coconut milk
  • 1/4 cup condensed milk adjust to taste
  • 1/2 cup water for mixing

Instructions
 

  • Bring a pot of water to a boil. Add sago pearls and cook for about 10 minutes, stirring occasionally.
  • Turn off the heat, cover the pot, and let sago sit for another 10 minutes until translucent. Drain and rinse with cold water.
  • In a bowl, combine coconut milk, condensed milk, and water. Mix well.
  • Add cooked sago and diced mangoes into the milk mixture. Stir gently.
  • Refrigerate for at least 30 minutes before serving.

Notes

You can blend half the mangoes into a puree for a richer mango flavor!
