Ingredients
  

Crumble Base
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted
Mango Filling
  • 2 cups fresh mango diced
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Method
 

  1. Preheat the oven to 180°C (350°F) and line an 8x8 baking pan with parchment paper.
  2. In a bowl, mix the oats, flour, brown sugar, and salt.
  3. Add the melted butter and stir until the mixture becomes crumbly.
  4. Press about two-thirds of the mixture into the bottom of the prepared baking pan to form the crust.
  5. In another bowl, combine the diced mango, sugar, cornstarch, and lemon juice. Mix well.
  6. Spread the mango filling evenly over the crust.
  7. Sprinkle the remaining crumble mixture over the mango layer.
  8. Bake for 30 minutes or until the top is golden brown.
  9. Allow the bars to cool completely before slicing into squares.

Notes

You can use frozen mango if fresh mango is not available. Let it thaw and drain excess liquid before using.
