Ingredients
  

For the Marinade
  • 1/4 cup Lemon juice Freshly squeezed is best.
  • 2 tablespoons Olive oil Can substitute with any neutral oil.
  • 2 cloves Garlic Minced or can use garlic powder.
  • 1 teaspoon Black pepper Best with freshly cracked.
  • 1 teaspoon Salt Sea salt or kosher salt recommended.
Main Ingredients
  • 1 pound Chicken breast Can substitute with chicken thighs.
  • 1/4 cup Fresh parsley For garnish; can swap with other herbs.
  • Skewers Wooden or metal skewers Soak wooden skewers in water for at least 30 minutes if using.

Method
 

Marination
  1. Cut the chicken breast into even cubes.
  2. In a bowl, mix lemon juice, olive oil, minced garlic, black pepper, and salt.
  3. Add the chicken to the bowl and let it marinate for at least 30 minutes in the fridge.
  4. For best results, marinate for a couple of hours.
Preparation
  1. Soak your wooden skewers in water (if using) while the chicken is marinating.
Grilling
  1. Thread the marinated chicken cubes onto the skewers, leaving space between pieces.
  2. Preheat the grill to medium-high heat.
  3. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally.
  4. Ensure the chicken is cooked through and has nice grill marks.
Serving
  1. Remove from grill, sprinkle with fresh parsley, and let skewers rest for a couple of minutes before serving.

Notes

Perfect for prepping ahead of time; they stay flavorful even after a day in the fridge. Great when served with a light side salad or in pita bread.
