Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper for easy removal.
- In a bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.
- In another bowl, beat the eggs and then add in the honey, lemon juice, lemon zest, and oil. Mix until everything is well blended.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and finish with the dry ingredients. Mix until just combined—overmixing can make the loaf dense.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too fast, tent it with aluminum foil.
- Let cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Zest your lemons first, don’t overmix, and use room temperature ingredients for better results. Feel free to customize with nuts or chocolate chips.
