Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Zest the lemons, capturing just the yellow part.
  3. Juice the lemons and strain out any seeds.
  4. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs, one at a time, mixing well after each addition.
  6. Add the lemon juice and zest, mixing gently.
  7. In another bowl, whisk together the flour and salt, then gradually add to the wet mixture and stir until just combined.
  8. Pour the batter into a prepared baking dish.
Baking
  1. Bake for 30 minutes or until golden and a toothpick inserted comes out clean.
