Preparation
- Preheat your oven to 350°F (175°C).
- Zest the lemons, capturing just the yellow part.
- Juice the lemons and strain out any seeds.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- Add the lemon juice and zest, mixing gently.
- In another bowl, whisk together the flour and salt, then gradually add to the wet mixture and stir until just combined.
- Pour the batter into a prepared baking dish.
Baking
- Bake for 30 minutes or until golden and a toothpick inserted comes out clean.
- Let it cool before slicing.

Store leftovers in an airtight container in the fridge for up to three days, or freeze slices for up to a month.
