Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a mixing bowl until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the lemon zest.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined – no need to overmix!
- Fold in the lemon curd until evenly distributed throughout the dough.
- Scoop tablespoons of dough onto your prepared baking sheet, leaving some space in between each, as they will spread.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden. They may look a bit soft in the center, but they will set up as they cool.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Room temperature ingredients make mixing easier. Avoid overbaking to maintain softness. You can also add a dusting of powdered sugar before serving.
