  • 2 large eggs Add one at a time.

  • 2 cups all-purpose flour Can substitute with gluten-free flour if needed.
  • 1 teaspoon baking soda Needed for leavening.
  • 1 teaspoon baking powder Needed for leavening.
  • 1 teaspoon salt Enhances sweetness.
  • 1 cup lemon curd Store-bought works or homemade for extra freshness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugar together in a mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the lemon zest.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined – no need to overmix!
  6. Fold in the lemon curd until evenly distributed throughout the dough.
  7. Scoop tablespoons of dough onto your prepared baking sheet, leaving some space in between each, as they will spread.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden. They may look a bit soft in the center, but they will set up as they cool.
  2. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Room temperature ingredients make mixing easier. Avoid overbaking to maintain softness. You can also add a dusting of powdered sugar before serving.
