  • 8 oz Cream cheese Make sure it's at room temperature.
  • 1 cup Coconut cream Or coconut milk for a lighter option.
  • 1/3 cup Lemon juice Freshly squeezed is best.
  • 1/2 cup Sugar Can substitute with honey or maple syrup.
  • 1 tbsp Gelatin Or agar-agar for vegan option.
  • 1/4 cup Shredded coconut Use unsweetened if you prefer less sweetness.
  • 1/2 cup Fresh berries Optional garnish.

Method
 

Preparation
  1. In a small bowl, sprinkle gelatin over a few tablespoons of cold water and let it bloom for about 5 minutes.
  2. In a mixing bowl, beat the cream cheese until smooth and creamy, using a hand mixer or stand mixer on medium speed.
  3. Mix in the coconut cream, lemon juice, and sugar until well combined.
  4. Heat the bloomed gelatin in the microwave for about 15-20 seconds until it’s fully melted. Let it cool slightly.
  5. Gradually add the melted gelatin to the cream cheese mixture and blend until smooth.
  6. Spoon the mixture into serving cups or a large dish, smoothing the top.
  7. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
  8. Once set, top with shredded coconut and fresh berries if using.

Notes

Consider garnishing with mint leaves or edible flowers for a fancy presentation. This dessert can be stored in the fridge for up to 5 days.
