- In a small bowl, sprinkle gelatin over a few tablespoons of cold water and let it bloom for about 5 minutes.
- In a mixing bowl, beat the cream cheese until smooth and creamy, using a hand mixer or stand mixer on medium speed.
- Mix in the coconut cream, lemon juice, and sugar until well combined.
- Heat the bloomed gelatin in the microwave for about 15-20 seconds until it’s fully melted. Let it cool slightly.
- Gradually add the melted gelatin to the cream cheese mixture and blend until smooth.
- Spoon the mixture into serving cups or a large dish, smoothing the top.
- Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, top with shredded coconut and fresh berries if using.
Notes
Consider garnishing with mint leaves or edible flowers for a fancy presentation. This dessert can be stored in the fridge for up to 5 days.
