Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
- Melt the butter in a saucepan over low heat, then remove it from the heat and let it cool slightly.
- In a mixing bowl, combine the granulated sugar and brown sugar with the melted butter, stirring until well combined.
- Beat in the eggs, lemon zest, and lemon juice until the mixture is smooth.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
- Pour the batter into the prepared pan and spread it evenly.
Baking
- Bake for about 20-25 minutes or until a toothpick inserted in the center comes out mostly clean.
- Allow the brownies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Zest lemons carefully, avoid the bitter white pith. Don't overmix wet and dry ingredients. Try a lemon glaze or powdered sugar on top. Store leftovers in airtight container in the fridge for up to a week.
