Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. Melt the butter in a saucepan over low heat, then remove it from the heat and let it cool slightly.
  3. In a mixing bowl, combine the granulated sugar and brown sugar with the melted butter, stirring until well combined.
  4. Beat in the eggs, lemon zest, and lemon juice until the mixture is smooth.
  5. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared pan and spread it evenly.
Baking
  1. Bake for about 20-25 minutes or until a toothpick inserted in the center comes out mostly clean.
  2. Allow the brownies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Zest lemons carefully, avoid the bitter white pith. Don't overmix wet and dry ingredients. Try a lemon glaze or powdered sugar on top. Store leftovers in airtight container in the fridge for up to a week.
