Preparation
- Preheat your oven to 350°F (175°C) to get it nice and hot for baking.
- Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment.
- In a medium saucepan over low heat, melt the butter. Remove from heat once melted.
- Stir in the granulated sugar until well combined. Then, add the eggs one at a time, mixing well after each addition.
- Incorporate the lemon zest and lemon juice into the mixture, stirring until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, stirring just until no white streaks remain.
- Pour the batter into your prepared pan, spreading it evenly.
Baking
- Pop the pan into your preheated oven and bake for about 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Remove from the oven and let it cool in the pan for a bit before transferring to a wire rack. Once cool, slice into squares and enjoy!
