Ingredients

Main Ingredients
  • 1 cup Unsalted Butter Adds richness and moisture. Can substitute with margarine if needed.
  • 1 cup Granulated Sugar Sweetens the brownies; brown sugar can be used for a deeper flavor.
  • 2 large Eggs Binds everything together for that perfect chewy texture. Vegan options include flax eggs or applesauce.
  • 1 cup All-Purpose Flour Forms the base. Whole wheat flour works well too, but the texture might be slightly denser.
  • 1 tablespoon Zest of Lemon Infuses bright, fresh flavor. Use organic lemons for the best zest and no pesticides!
  • 1/4 cup Lemon Juice Balances the sweetness. Freshly squeezed juice offers the best taste, but bottled can work in a pinch.
  • 1 teaspoon Baking Powder Helps the brownies rise slightly, creating that chewy texture.
  • 1/4 teaspoon Salt Enhances all the flavors. A pinch is all you need!

Method

Preparation
  1. Preheat your oven to 350°F (175°C) to get it nice and hot for baking.
  2. Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment.
  3. In a medium saucepan over low heat, melt the butter. Remove from heat once melted.
  4. Stir in the granulated sugar until well combined. Then, add the eggs one at a time, mixing well after each addition.
  5. Incorporate the lemon zest and lemon juice into the mixture, stirring until fully combined.
  6. In a separate bowl, whisk together flour, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, stirring just until no white streaks remain.
  7. Pour the batter into your prepared pan, spreading it evenly.
Baking
  1. Pop the pan into your preheated oven and bake for about 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Remove from the oven and let it cool in the pan for a bit before transferring to a wire rack. Once cool, slice into squares and enjoy!

Notes

For best results, don’t overmix the batter. Cooling is essential for proper texture. Consider adding lemon glaze for an extra special touch.
