  • 1/4 cup Lemon juice Freshly squeezed juice is best.
  • 1 tablespoon Lemon zest Use a microplane for fine zesting.
  • 1/4 cup Sweetener (like erythritol or stevia) Choose your favorite low-carb sweetener.

Preparation
  1. Softening the cream cheese at room temperature helps it blend easily into the mousse.
  2. In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.
  3. In another bowl, combine the softened cream cheese and sweetener until smooth and creamy.
  4. Stir in the lemon juice and lemon zest to the cream cheese mixture until fully combined.
  5. Gently fold the whipped cream into the lemon mixture using a spatula.
Chilling and Serving
  1. Spoon the mousse into serving dishes or a single bowl, then refrigerate for at least 2 hours.
  2. Serve chilled, topped with extra lemon zest, berries, or a dollop of whipped cream.

Notes

Chill your mixing bowl and beaters for extra fluffy whipped cream. Taste the mousse before chilling and adjust sweetness as needed. This mousse can be served in individual cups or bowls.
