  • 1.5 lbs Baby Red or Yukon Gold Potatoes scrubbed clean and cut into 1-inch pieces
  • 1 bunch Asparagus about 1 lb, tough ends trimmed
  • 3 tbsp Olive Oil divided
  • 1 tbsp Italian Seasoning
  • 3 cloves Garlic minced
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • 2 tbsp Fresh Parmesan Cheese grated, for garnish (optional)
  • 1 tbsp Fresh Parsley chopped, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup, or lightly grease it.
  2. In a large mixing bowl, combine the cut potatoes, 2 tablespoons of olive oil, Italian seasoning, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss well until the potatoes are evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded, as this helps them roast rather than steam.
Roasting
  1. Roast the potatoes for 20 minutes, stirring them halfway through to ensure even browning.
  2. While the potatoes are roasting, prepare the asparagus. In the same mixing bowl (no need to wash), toss the trimmed asparagus with the remaining 1 tablespoon of olive oil, a pinch of salt, and a pinch of black pepper.
  3. After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Add the seasoned asparagus to the baking sheet, spreading them out among the potatoes in a single layer.
  4. Return the baking sheet to the oven and continue to roast for another 10-15 minutes, or until the potatoes are fork-tender and golden brown, and the asparagus is tender-crisp and bright green.
Serve
