Preparation
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup, or lightly grease it.
- In a large mixing bowl, combine the cut potatoes, 2 tablespoons of olive oil, Italian seasoning, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss well until the potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded, as this helps them roast rather than steam.
Roasting
- Roast the potatoes for 20 minutes, stirring them halfway through to ensure even browning.
- While the potatoes are roasting, prepare the asparagus. In the same mixing bowl (no need to wash), toss the trimmed asparagus with the remaining 1 tablespoon of olive oil, a pinch of salt, and a pinch of black pepper.
- After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Add the seasoned asparagus to the baking sheet, spreading them out among the potatoes in a single layer.
- Return the baking sheet to the oven and continue to roast for another 10-15 minutes, or until the potatoes are fork-tender and golden brown, and the asparagus is tender-crisp and bright green.
Serve
