For the Feta Filling
  • 8 oz Feta cheese crumbled
  • 1 tbsp Fresh parsley chopped
  • 1 tbsp Fresh mint chopped
  • 1 tsp Lemon zest grated
  • 1/4 tsp Black pepper freshly ground
For Assembly
  • 20 Wonton wrappers square
  • 1 Large egg beaten, for egg wash
  • 2 tbsp Water for sealing
  • Cooking spray olive oil or avocado oil
For the Hot Honey Glaze
  • 1/4 cup Honey
  • 1-2 tbsp Sriracha or other hot sauce, to taste
  • 1/2 tsp Apple cider vinegar

Equipment

  • Air Fryer
  • Mixing Bowl
  • Small saucepan
  • Pastry Brush
  • Small Bowl

Method

Prepare the Feta Filling
  1. In a medium mixing bowl, combine the crumbled feta cheese, chopped fresh parsley, chopped fresh mint, lemon zest, and black pepper. Mix gently until just combined. Do not overmix.
Assemble the Wonton Rolls
  1. Lay a wonton wrapper on a clean, dry surface with one corner pointing towards you (diamond shape).
  2. Place about 1 to 1.5 teaspoons of the feta filling near the bottom corner of the wonton wrapper.
  3. Dip your finger in a small bowl of water and moisten the edges of the wonton wrapper.
  4. Fold the bottom corner over the filling and tuck it in tightly. Then, fold in the two side corners towards the center.
  5. Roll the wonton tightly from the bottom towards the top corner, creating a small roll. Press firmly to seal the edges, ensuring no filling escapes. Repeat with the remaining wonton wrappers and filling.
Air Fry the Wonton Rolls
  1. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  2. Lightly spray the air fryer basket with cooking spray.
  3. Place the wonton rolls in a single layer in the air fryer basket, ensuring they are not overcrowded. You may need to cook in batches.
  4. Lightly spray the tops of the wonton rolls with cooking spray.
  5. Air fry for 6-8 minutes, flipping halfway through, until golden brown and crispy. Cooking time may vary depending on your air fryer model.
Make the Hot Honey Glaze
  1. While the wontons are air frying, combine the honey, Sriracha (starting with 1 tablespoon and adding more to taste for desired heat), and apple cider vinegar in a small saucepan.
  2. Heat over low heat, stirring occasionally, until the mixture is warm and well combined. Do not boil.
Serve
  1. Once the wonton rolls are cooked, transfer them to a serving platter.
  2. Generously brush or drizzle the warm hot honey glaze over the crispy wonton rolls.
  3. Serve immediately and enjoy the sweet, spicy, and salty combination!

Notes

**Baking Option**: If you don't have an air fryer, you can bake these. Preheat oven to 400°F (200°C). Place wontons on a parchment-lined baking sheet, spray lightly with cooking spray, and bake for 12-15 minutes, flipping halfway, until golden and crispy.
**Make Ahead**: Wonton rolls can be assembled up to 2 hours in advance and kept refrigerated, covered loosely with plastic wrap. For best results, cook right before serving.
**Spice Level**: Adjust the amount of Sriracha in the hot honey glaze to your preferred spice level. A pinch of red pepper flakes can also be added to the filling for extra heat.
