Ingredients
  

For the shrimp
  • 1 pound Shrimp peeled and deveined
  • 1/4 cup Honey
  • 1/4 cup Chipotle sauce
For the mango salsa
  • 1 cup Mango diced
  • 1/2 cup Red onion finely chopped
  • 1/4 cup Cilantro chopped
  • 1 Juice Lime freshly squeezed
  • 1 tsp Salt
For serving
  • 8 pieces Corn tortillas

Method
 

Marinating the shrimp
  1. In a bowl, mix shrimp with honey and chipotle sauce. Marinate for 15 minutes.
Preparing the salsa
  1. While shrimp is marinating, prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, and salt in a separate bowl.
Cooking the shrimp
  1. Heat a skillet over medium heat, and cook the marinated shrimp for 2-3 minutes on each side until cooked through.
Warming the tortillas
  1. Warm corn tortillas in a separate pan or microwave.
Assembling the tacos
  1. To assemble, place shrimp on a tortilla, top with mango salsa, and serve immediately.

Notes

Serve the tacos fresh off the skillet with a squeeze of lime on top. You can add extra cilantro or sliced avocado for more flavor. These tacos are best enjoyed immediately for the freshest taste. If you have leftovers, store the cooked shrimp and mango salsa separately in airtight containers in the fridge. Consume them within 2-3 days. When ready to eat, reheat the shrimp in a skillet or microwave and warm the tortillas before serving again. Don’t overcook the shrimp. Cook them just until they are pink and opaque. For extra flavor, try adding a dash of lime juice to the shrimp while cooking. Use fresh ingredients for the salsa for the best taste. If you like it spicy, add more chipotle sauce.
