Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium saucepan, melt the butter over low heat. Remove it from heat once melted.
  3. Stir in the sugar until well-blended, then add the eggs one at a time, mixing well after each addition.
  4. Mix in the fresh lemon juice and lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  6. Transfer the batter into the prepared baking pan, spreading it evenly.
  7. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Let them cool in the pan for about 10 minutes before transferring to a wire rack to cool completely, then slice into squares.

Notes

Eggs should be room temperature and do not overmix once the flour is added. You can customize the citrus by using orange or lime zest and juice. For an extra touch of sweetness, drizzle a simple lemon glaze on top.
