Homemade Ice Cream Cookie Sandwiches

These delicious homemade ice cream cookie sandwiches are the perfect treat for any occasion. Customize them with your favorite cookies and ice cream flavors!

Ingredients
  

Chocolate Chip Cookies

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips

Ice Cream

  • 1 quart vanilla ice cream or flavor of choice

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.
  • Stir in chocolate chips, then scoop dough onto the baking sheet in evenly sized rounds.
  • Bake for 10-12 minutes, or until golden brown. Allow cookies to cool completely.
  • Once cookies are cool, place a scoop of ice cream on the flat side of one cookie and top with another cookie. Gently press together.
  • Wrap each sandwich in plastic wrap and freeze for at least 30 minutes before serving.

Notes

For variety, try different cookie flavors or rolling the edges in sprinkles, nuts, or mini chocolate chips before freezing!
