- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper, ensuring it covers the entire sheet.
- In a food processor or blender, combine the cottage cheese, large egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Blend until the mixture is completely smooth and creamy, with no visible curds. If using, add the optional Parmesan cheese and pulse briefly to combine.
- Pour the cottage cheese mixture onto the center of the prepared parchment-lined baking sheet. Using the back of a spoon or a small spatula, spread the mixture evenly into a round or rectangular shape, about 1/4 to 1/2 inch thick and approximately 9-10 inches in diameter. Try to make the edges slightly thicker if you prefer a crust.
- Bake the crust in the preheated oven for 20-25 minutes, or until it's firm, golden brown around the edges, and cooked through. The center should be set and dry to the touch.
- Carefully remove the baking sheet from the oven. Let the crust cool on the baking sheet for 5-10 minutes. This allows it to firm up further, making it easier to handle. Once cooled slightly, you can add your desired pizza sauce and toppings.
- Return the pizza with toppings to the oven and bake for an additional 8-12 minutes, or until the cheese is melted and bubbly and the toppings are heated through.
Notes
For an extra crispy crust, after the first bake, you can carefully flip the crust over (after it has cooled slightly) and bake for an additional 5-7 minutes. This crust is best enjoyed fresh. Leftovers can be stored in the refrigerator for up to 2-3 days and reheated in an oven or air fryer for best texture. Be sure to use parchment paper; aluminum foil or a non-greased baking sheet may cause sticking.
