Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Mix in the cottage cheese, eggs, and honey until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  7. Bake for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for better flavor and moisture. Don't forget the parchment paper for easy removal. Customize mix-ins with nuts or chocolate chips.
