Ingredients
  

For the Casserole
  • 1 lb Brioche bread day-old, cut into 1-inch cubes
  • 10 Large eggs
  • 1.5 cup Egg whites from a carton
  • 2 cup Milk 2% or non-dairy milk
  • 0.5 cup Vanilla protein powder whey or plant-based
  • 0.5 cup Maple syrup plus more for serving
  • 2 tsp Vanilla extract
  • 1 tsp Ground cinnamon
  • 0.25 tsp Salt
For the Streusel Topping
  • 2 tbsp Unsalted butter melted
  • 0.25 cup Light brown sugar
  • 0.5 cup Chopped pecans or walnuts
For Serving (Optional)
  • 1 cup Fresh berries
  • 0.5 cup Greek yogurt plain or vanilla

Method
 

Prepare the Casserole Base
  1. Lightly grease a 9x13 inch baking dish with butter or cooking spray. Arrange the brioche cubes evenly in the prepared dish.
  2. In a large mixing bowl, whisk together the large eggs, egg whites, milk, vanilla protein powder, maple syrup, vanilla extract, ground cinnamon, and salt until well combined and smooth. Ensure there are no lumps from the protein powder.
  3. Pour the egg mixture evenly over the brioche cubes in the baking dish. Gently press down on the bread with a spatula to ensure all the cubes are fully saturated with the liquid. Let it sit for at least 30 minutes at room temperature, or cover with plastic wrap and refrigerate for 4 hours or overnight for best results.
Bake the Casserole
  1. Preheat your oven to 375°F (190°C). If the casserole was refrigerated, remove it from the fridge while the oven preheats.
  2. While the oven preheats, prepare the streusel topping. In a small bowl, combine the melted butter, light brown sugar, and chopped pecans (or walnuts). Mix until crumbly.
  3. Uncover the baking dish and sprinkle the streusel topping evenly over the brioche mixture.
  4. Bake for 40-50 minutes, or until the casserole is golden brown on top, puffed, and set in the center. A knife inserted into the center should come out mostly clean.
  5. Remove from the oven and let the casserole cool for 5-10 minutes before serving. This allows it to set slightly.
Serve and Enjoy
  1. Serve warm, garnished with fresh berries, an extra drizzle of maple syrup, and a dollop of Greek yogurt for an added protein boost.

Notes

For an even richer flavor, you can add a tablespoon of orange zest to the egg mixture. This casserole is excellent for meal prepping; simply reheat individual portions in the microwave or oven. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
