Preparation
- In a microwave-safe bowl, melt the dark chocolate in 20-second intervals, stirring between each until smooth. Let it cool for a few minutes.
- In a food processor, combine the silken tofu, cooled melted chocolate, maple syrup, cocoa powder, vanilla extract, and a pinch of salt. Blend until completely smooth and creamy.
- Taste the mousse and add a little more maple syrup if you prefer it sweeter, blending again to combine.
Chilling
- Spoon the mousse into serving dishes and cover them with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to firm up.
Serving
- Once chilled, serve as is or add your favorite toppings!
Notes
Choose quality chocolate for richer flavor. You can add coffee or orange zest in the blending stage for extra flavor. Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to a month.
