Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the grated carrots, eggs, yogurt, honey (or maple syrup), and vanilla extract until well combined.
  4. In another bowl, whisk together the whole wheat flour, baking soda, cinnamon, and any additional spices.
Mixing
  1. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  2. If using, gently fold in the nuts or raisins.
Baking
  1. Pour the batter into your prepared loaf pan and smooth the top with a spatula.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for better sweetness and smoother batter. Grate carrots finely to blend well. Avoid overmixing to maintain a light texture. Slice only after cooling completely to prevent mushiness.
