Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the grated carrots, eggs, yogurt, honey (or maple syrup), and vanilla extract until well combined.
- In another bowl, whisk together the whole wheat flour, baking soda, cinnamon, and any additional spices.
Mixing
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- If using, gently fold in the nuts or raisins.
Baking
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use overripe bananas for better sweetness and smoother batter. Grate carrots finely to blend well. Avoid overmixing to maintain a light texture. Slice only after cooling completely to prevent mushiness.
