Preparation
- Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish with cooking spray or butter.
Mix Ingredients
- In a large mixing bowl, whisk together the low-fat cottage cheese, large eggs, maple syrup (or sweetener of choice), vanilla extract, and salt until well combined and relatively smooth. A few small lumps from the cottage cheese are perfectly fine.
- Gently fold in the rolled oats, fresh or frozen blueberries (do not thaw if frozen), and the optional lemon zest until all ingredients are evenly distributed throughout the cottage cheese mixture.
Bake and Serve
- Pour the mixture into the prepared 8x8 inch baking dish and spread it evenly with a spatula.
- Bake for 30-35 minutes, or until the top is golden brown and the center is set. To check for doneness, a knife inserted into the center should come out mostly clean.
- Remove the baking dish from the oven and allow it to cool for at least 10 minutes before slicing and serving. This cooling time is crucial for the bake to set properly.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. This bake is delicious served warm or cold. You can enjoy it plain, or with a drizzle of extra maple syrup, a dollop of Greek yogurt, or a sprinkle of chopped nuts for added crunch.
